Tasting Notes
Beautiful ruby color. Aromatic and complex, showing dark fruits such as blackcurrant and blueberry, complemented by hints of cigar box, aromatic herbs, mulberry, and rhubarb. On the palate, vibrant red fruit flavors of cherry and strawberry. Supple fine tannins leading to a smooth dark chocolate finish.
Vinification
All components were picked separately at optimum ripeness, after which the grapes were destemmed, but not crushed, leaving the berries whole for a softer extraction. Fermented separately in open top fermenters, a combination of punch downs and pump-overs were used, with most of the extraction focused on the first half of the fermentation. After the fermentation completed the grapes were gently pressed and underwent natural MLF in tank before being transferred to barrel for 12 months.
Winemaker’s Comments
Best served slightly chilled, this is an expressive and approachable wine that makes it a versatile companion at the table or on its own. Drinking beautifully now, but will remain enjoyable for another five years.
