Terroir:

South-West and North facing slope of decomposed granite with varying amounts of clay and gravel.

Vinification Details:

Handpicked from selected parcels within 3 different blocks. Fermented in open-top tanks – a combination of punch-downs and pump-overs were used to gain optimal extraction. Left on the skins for 28 days and then pressed into barrel. Malolactic fermentation occurred in barrel and the wine was left without any SO2 for 3 months. Thereafter, SO2 was added and the wine remained in barrel, without racking, for 24 months.

Oak maturation: 300-litre French oak barrels (60% new).
