Tasting Notes
A complex bouquet of blueberries, black currant, violets, dark cherry, and more savoury notes of tobacco, cedar spice, and aromatic herbs. On the palate, there is a fine velvety tannin on the entry with a full mouthfeel that lingers well. There is a slight dry finish that invites another glass.
Vinification
All components were picked separately at optimum ripeness, after which the grapes were destemmed, but not crushed, leaving the berries whole for a softer extraction. Fermented separately in open-top fermenters, a combination of punch downs and pump-overs was used, with most of the extraction focused on the first half of the fermentation. After fermentation completed, the grapes were gently pressed and underwent natural malolactic fermentation in tank before being transferred to barrel for 12 months.
