The Saxenburg Private Collection Pinotage 1995 is still bright red in colour, this wine has aged with grace. Upon opening, it is somewhat earthy (think forest floor and mushrooms) in profile, but with time this dissipates to reveal lovely blue and red berries. These are complemented by notes of coffee beans, fresh tomatoes and a herbal edge. The palate is light and fresh but has maintained beautifully finely grained and soft tannins. Decant before serving.

Predominately weathered Table Mountain sandstone on a West facing slope.

Vinification Details:

Harvested at physiological ripeness, then destemmed and fermented in open-top tanks. Thorough temperature control and 3 punch downs and pump-overs daily ensured a soft extraction. Pressed of the skins early, to prevent bitterness.

Oak maturation: A combination of 2nd and 3rd fill, 300L, French oak barrels. 12 months with no racking or fining.
