Tasting Notes
The Saxenburg Guinea Fowl Red 2022 has a vibrant ruby to garnet colour, and the nose shows initial dark fruit aromas like blackcurrant, cassis and black cherry, supported by whiffs of vanilla, cinnamon and dark chocolate. The palate is beautifully weighted and juicy, with a dense but finely-grained tannin structure.
Winemaker’s Comments
All components were picked separately at optimum ripeness, after which the grapes were destemmed, but not crushed, leaving the berries whole for a softer extraction. Fermented separately in open-top fermenters, a combination of punch-downs and pump-overs were used, with most of the extraction focused on the first half of the fermentation. After the fermentation was completed the grapes were gently pressed and underwent natural MLF in the tank before being transferred to barrels for 12 months.
