The Saxenburg Private Collection Cabernet Sauvignon 2017 vintage was in many respects superior to the much famed 2015 vintage and this wine is a testament to that. As is typical with Cabernet Sauvignons from the Polkadraai Hills ward, this wine has an incredible freshness and elegance to it, even though the tannins are still young and firm. Beautiful aromas of tobacco leaves, plums and blackcurrant lead to a palate that is nicely weighted and finely grained.

Tasting Notes

The Saxenburg Private Collection Cabernet Sauvignon 2017 vintage was in many respects superior to the much famed 2015 vintage and this wine is a testament to that. As is typical with Cabernet Sauvignons from the Polkadraai Hills ward, this wine has an incredible freshness and elegance to it, even though the tannins are still young and firm. Vinification Details:

The selected areas of the best blocks were harvested at optimum ripeness and yeast fermented in open tanks at 28°C. Regular punching down and pumping-over was practiced, with 2 – 3 weeks of skin contact after fermentation.

Oak maturation: 300-litre French oak barrels of which 40% was new, 40% 2nd fill and 20% 3rd fill.
