Saxenburg Guinea Fowl Chenin Blanc 2016

Winemaker’s comments

This 100% Chenin Blanc has a beautiful green tint in colour and shows very typical stone fruit aromas with hints of pineapple and apple flavours. The palate shows nice vibrant fruit that follows through to a great mid-palate weight with a lingering after taste. This Chenin Blanc has all the qualities to go well with food or to enjoy as it is on its own. Serve chilled and will go nice with a crispy pork belly or duck and most fish dishes.

 

Vinification Details

Only healthy grapes were picked early morning whilst the grape juice was still cool. The juice had skin contact then pressed while still cool. The grape juice settled for a day and the clear juice fermented cold with 2 different yeast strains for intense flavour. Long lees contact for complexity and no Malolactic fermentation.

Red 2014

Cabernet Sauvignon / Merlot / Malbec / Cabernet Franc 2014

Winemaker’s comments

This Bordeaux blend has a good combination of red fruits like mulberry, raspberry and cherry with some violets and Blackcurrant also present. Well balanced on the palate with a nice and clean finish. It is ready to enjoy now but will mature into a more complex wine. The natural balance of it will compliment game, red meat or full flavoured meat dishes as well as pasta and pizza. An ideal wine for better casual meals and occasions.

 

Vinification Details

Selected full ripe grapes fermented with yeast and no sulphur, in open tanks at 28°C. Punching down and pumping over four times daily and some skin contact after fermentation was allowed. Malolactic fermentation finished with natural bacteria in the tank.

Winemaker’s comments

A complex, fruity, figgy, grassy, tropical and fine flowery flavour. The wine has exceptional balance and a fresh, elegant character. With its long fruity finish and elegant structure it is ideal to mature for a number of years or to enjoy as an aperitif or with light salads and fish.

 

Vinification Details

Only healthy grapes in cool conditions are harvested, skin contact for 18 hours, pressed, juice settled, clear juice fermented, with five different yeasts and long lees contact for complexity. There was no malolactic fermentation.

Our first attempt to produce a fine Cap Classique. The entire process was carefully done to have an end result of only 3000 bottles.

A Methode Cap Classique with a very young colour, fine mousse and a prominent yeasty flavour already established. The taste is crisp, fruity and well balanced. It finishes refreshingly. The grape flavours stays prominent. This wine will be more complex after some time in your cellar and will compliment all nice food or celebratory event.

Rich, deep purple in colour, with a mouth filling concentration of savoury smoked meat and ripe plum fruit matched by a seamless integration of oak and ripe tannins. Best enjoyed with red meat and game dishes: Ostrich, Springbok, Kudu, Beef and Karoo Lamb.

 

Vinification Details

Harvesting at optimum ripeness, and open fermentation with yeast culture at 28°C. Punching down and pump-overs three times daily. No skin contact after fermentation. Pressed early with no skin contact.
